Spring has officially sprung! The sun is shining, the days are stretching out, and it’s finally the season for fresh and nutritious spring salads to steal the spotlight.

At Willowbrook Foods, we are Ireland’s largest bagged salad producer supplying delicious prepared vegetables and salads. Therefore, we love discovering and promoting new salads and recipe ideas.

This blog highlights some exciting seasonal spring salads for you to try out this month!

Strawberry Spinach Salad:

Ingredients: Fresh spinach leaves, sliced strawberries, crumbled feta cheese, toasted almonds and red onion slices.

Dressing: Balsamic vinaigrette or a light strawberry vinaigrette.

Asparagus and Pea Salad:

Ingredients: Blanched asparagus spears, fresh peas, shaved Parmesan cheese and chopped mint leaves.

Dressing: Lemon-Dijon vinaigrette.

Radish and Arugula Salad:

Ingredients: Sliced radishes, baby arugula, avocado slices, toasted pine nuts and shaved Pecorino cheese.

Dressing: Simple lemon and olive oil dressing with a hint of garlic.

Spring Mix with Citrus Avocado:

Ingredients: Spring mix lettuce, segments of orange and grapefruit, sliced avocado and toasted pistachios.

Dressing: Citrus vinaigrette made with fresh orange and grapefruit juice, olive oil, and honey.

Grilled Chicken and Quinoa Salad:

Ingredients: Grilled chicken breast slices, cooked quinoa, cherry tomatoes, cucumber slices and mixed greens.

Dressing: Light lemon-herb dressing with chopped fresh basil, parsley and chives.

Mango, Avocado, and Black Bean Salad:

Ingredients: Diced mango, avocado chunks, black beans, red bell pepper strips, red onion slices, chopped cilantro.

Dressing: Lime-cilantro vinaigrette with a touch of honey.

Roasted Beet and Goat Cheese Salad:

Ingredients: Roasted beets (sliced or cubed), mixed greens, crumbled goat cheese, candied pecans.

Dressing: Balsamic reduction drizzle or a honey-Dijon vinaigrette.

Quinoa and Chickpea Greek Salad:

Ingredients: Cooked quinoa, chickpeas, cherry tomatoes, cucumber chunks, Kalamata olives, feta cheese, chopped parsley.

Dressing: Greek-inspired dressing with olive oil, red wine vinegar, garlic, oregano, and lemon juice.
