With only about 25 calories per medium carrot, they’re a low-calorie, nutrient-dense snack that fits perfectly into any balanced diet. So whether you enjoy them raw, roasted, or blended into a smoothie, carrots are an easy and tasty way to boost your overall well-being!

This blog will highlight some tasty carrot recipes to incorporate more carrots into your diet.

Carrot Recipe one: Carrots with Honey and Thyme

For a tasty side dish, try some roasted Carrots with Honey and Thyme.

Ingredients:

  • 6-8 of Willowbrook’s prepared carrots
  • 2 tbsp of olive oil
  • 1 tsp honey
  • 1 tsp fresh thyme
  • Salt and pepper

Instructions:

  1. Set your oven to 200°C
  2. Season your carrots with olive oil, honey, thyme, salt and pepper until they are well coated
  3. Roast the carrots by spreading them evenly on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes.

Carrot Recipe Two: Carrot Cake

If you’re in the mood for something sweeter, how about some delicious carrot cake. 

Ingredients: 

  • 175g light muscovado sugar
  • 175ml sunflower oil
  • 3 large eggs
  • 140g grated carrot
  • 100g raisins
  • 1 large zested orange
  • 175g self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • Half a tsp grated nutmeg

Instructions:

  1. Heat the oven to 180°C
  2. Mix the sugar, sunflower oil and eggs. Stir in the carrots, raisins and orange zest.
  3. Sift the flour, bicarbonate of soda, cinnamon and nutmeg into a bowl and mix.
  4. Put the mixture into a tin and bake for 40-45 mins.
  5. Cool for 5 minutes and then remove the cake.
  6. Drizzle icing over the cake to finish it off.
