A timeless classic, potato leek soup is a creamy delight. Sautee leeks and garlic in butter, add cubed potatoes and vegetable broth. Then simmer until the potatoes are tender. Finish with a swirl of heavy cream and a sprinkle of chives for a comforting, rustic meal.
Tomato Soup
This warming vegan soup is made using juicy, ripe tomatoes. It’s a comforting recipe to make and eat throughout the year. Cut tomatoes into quarters. Peel 1 medium onion and 1 small carrot and chop them into small pieces. Chop 1 celery stick roughly the same size. Or for convenience, use Willowbrooks ready to go and freshly prepared vegetables. With the heat low, cook the vegetables until they’re soft. Add 2 pints of stock and cook gently for 25 minutes, stirring a couple of times. Then blitz the soup in a blender until smooth.
