Easter weekend is just around the corner, and it’s the perfect time to gather with friends and family to enjoy some delicious food. If you’re looking for recipe ideas for your Easter feast, look no further. Here are three recipes that are sure to impress your guests.
Roasted Carrots with Honey and Thyme
If you’re looking for a healthy and delicious side dish, these roasted carrots are sure to hit the spot. They’re drizzled with honey and sprinkled with thyme, giving them a sweet and savoury flavour that’s perfect for Easter.
Ingredients:
- 2 pounds of carrots, peeled and cut into large chunks
- 2 tablespoons of olive oil
- 2 tablespoons of honey
- 2 teaspoons of fresh thyme leaves
- Salt and pepper to taste
Directions:
- Preheat your oven to 400 degrees Fahrenheit.
- In a large bowl, toss the carrots with the olive oil, honey, and thyme leaves.
- Season with salt and pepper to taste.
- Spread the carrots out in a single layer on a baking sheet.
- Roast in the oven for 20-25 minutes, or until the carrots are tender and caramelised.
Grilled Asparagus with Lemon and Parmesan
Asparagus is a classic Easter vegetable, and grilling it gives it a delicious smoky flavour. This recipe is a healthy and flavorful side dish that’s perfect for your Easter feast.
Ingredients:
- 1 pound of asparagus, trimmed
- 1 tablespoon of olive oil
- 1 lemon, juiced and zested
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
Directions:
- Preheat your grill to medium-high heat.
- In a large bowl, toss the asparagus with the olive oil, lemon juice, and lemon zest.
- Season with salt and pepper to taste.
- Grill the asparagus for 5-7 minutes, or until tender and lightly charred.
- Sprinkle with Parmesan cheese before serving.
Chocolate Easter egg nest cakes
- 225g of dark chocolate, broken up
- 2 tbsp golden syrup
- 50g butter
- 75g cornflakes
- 36 mini eggs
Directions:
- Line a 12-hole fairy cake tin with paper cases.
- Melt the chocolate, golden syrup and butter in a bowl set over a saucepan of gently simmering water. Stir the mixture until smooth.
- Remove the bowl from the heat and gently stir in the cornflakes until all of the cereal is coated in the chocolate.
- Divide the mixture between the paper cases and press 3 chocolate eggs into the centre of each nest. Chill in the fridge for 1 hour, or until completely set.
